Maple Syrup Iced Coffee

A while ago, I read an article posted by a butler to one of the wealthier families in England. He was saying that maple syrup was not used enough in everyday food. He came up with a recipe for maple syrup in coffee. This inspired me to start adding it to my own coffee. Of course his was far fancier than mine will ever be, but it was the inspiration for this treat. I wish I could find that article again so I could link it. If anyone knows what I am talking about please let me know so I can save it!!

Now on to my little creation. The first thing you’ll need to do is brew a cup of your favorite coffee beans.

Once the coffee is ready, give it time to cool. If you are too hasty, it will melt all the ice and the coffee will be watery. When it is no longer steaming hot, get your glasses and fill them with ice.

Then put a dash of cinnamon in each one. The reason I put the cinnamon in first is because it tends to all float around on the top of the glass. This way it has a chance to mix in with the rest of the coffee first.

Then pour maple syrup over the ice.

After that, pour in unsweetened creamer. I personally like quite alot in my iced coffee. Maple syrup is full of sugar so it will sweeten the coffee perfectly.

Next pour the coffee in slowly, and mix it up. The syrup is rather heavy, and tends to settle at the bottom of the glass. Stirring it will flavor the entire glass.

The Best Peanut Butter Cookies!!

Recently I have been on a baking frenzy. I never used to like baking, but lately I have been thoroughly enjoying making a variety of sweets. One of the first things that I made while on this baking spree was peanut butter cookies. Cookies and peanut butter are two of my favorite sweets, so nothing but the best will do. These cookies went above and beyond my expectations and are now a house favorite. Since me and my family loved them so much, I thought I would share them with all of you.

1 cup unsalted butter

1 1/2 cups creamy peanut butter (I used and recommend Jif, but you can use whatever peanut butter you like.)

1 cup white sugar

1 cup packed brown sugar

2 eggs

2 1/2 cups all-purpose flour

1 tsp baking powder

1/4 tsp salt

1 1/2 tsps baking soda

After the dough has been refrigerated, take it out and roll into 1" balls. The dough might be hard, so you may have to work it between your hands a little bit before you can shape it.

Next, take a table fork and press down on the balls, first vertically then horizontally, until the dough has that classic peanut butter cookie shape. The cookies should be rather thin. If they are too thick they will be more like bread than cookies.

Bake at 375 degrees F for 10-11 minutes. Even if they don't look done they probably are. Once they cool they will harden.

Once cool remove from cookie sheet and enjoy! This recipe makes loads of cookies, so if you don't want to use all of the dough, simply place in a zip-lock bag or plastic wrap. It will stay good in your refrigerator for a few weeks.

These are hard to stop eating. Believe it or not, four of us ate 28 cookies in two days. It was terribly indulgent!

If you want to dress them up a bit here is a bit of a bonus. I made these to serve as an after dinner dessert, but imagine the hit this would make at a party: Peanut Butter Cookie Ice Cream Sandwiches!

Take two cookies and put them on whatever dish you wish. I'm using a tea saucer in this photo. Add a large scoop or vanilla ice cream on one of the cookies. Then place the other on top and gently push down just a smidge.
